Description:
Ingredients
3 stalks celery, chopped
3 Romaine lettuce leaves
3 thin slices Vidalia or yellow onion
6 radishes, chopped
3 cans of solid white tuna in water, drained
Squeeze 3 sections of a Meyer lemon
3 Tbs. of light mayo
1/2 tsp. salt
1/2 tsp. pepper
Preparation
Directions:
1. Add the first four ingredients to a food processor and pulse until all of the vegetables are diced.
2. Add remaining ingredients to processor and pulse until slightly blended.
3. Transfer the contents of the processor to a large bowl and stir to blend.
4. Add 1/2 tsp. of salt and pepper
5. Stuff into mini-pita pockets or serve over lettuce
