This classic Southern delight will leave stomachs full and faces smiling!


1 pound smoked pork or spicy pepperoni sausage, halved lengthwise and sliced ΒΌ inch-thick
1 medium yellow onion, diced
3 cans (14.5 ounces each) Sunny Select Fat Free Chicken Broth
1 can (28 ounces) Sunny Select Diced Tomatoes
1 tablespoon Cajun seasoning
1 pound cooked 36-40 count peeled and deveined Master Catch Shrimp, thawed if necessary and coarsely chopped
1 bag (16 ounces) Sunny Select Frozen Cut Okra
3 cups Sunny Select Instant White Rice


Heat large saucepot over medium-high heat until hot. Add sausage and onion, and cook until onion is translucent, stirring occasionally. Add broth, tomatoes with their juice and seasoning; heat to boiling. Stir in shrimp, okra and rice. Cover, reduce heat to low. Simmer 3 to 5 minutes. Remove from heat; let stand 5 minutes.
