1 tablespoon Sunny Select Olive Oil
3 cups peeled, finely chopped butternut squash
1 cup sliced green onions
8 slices pre-cooked bacon, cut into 1-inch pieces
1 jar (16 ounces) Light Alfredo Sauce
1 package (10-12 ounces) Sunny Select Pasta, cooked according to package directions
Salt & Pepper to taste
Shredded Parmesan Cheese, optional
Heat oil in large skillet on medium-high; saute squash with onion andbacon for 5 minutes. Add Alfredo sauce; reduce heat to medium-low;simmer 5 minutes. Toss with cooked pasta, salt and pepper to taste.Sprinkle with Parmesan cheese, if desired.Makes 6 servings.
