A quick, simple and oh so good family dinner idea!
Ingredients
2 packages (8.8 to 9 ounces each) refrigerated cheese tortellini
1 tablespoon Sunnyside Farms Unsalted Butter
1 - ½ pounds boneless, skinless chicken breasts, cut into 1/2-inch pieces
1 each garlic clove and medium yellow onion, chopped
1 teaspoon each finely chopped fresh sage and parsley leaves
2 cups sliced white mushrooms
1 cup Sunny Select Frozen Peas
¼ cup Sunny Select Fat Free Chicken Broth
1 – ½ cups Sunnyside Farms Heavy Cream
Salt and ground white pepper, to taste
1 container (4 to 5 ounces) crumbled Gorgonzola cheese
Preparation
Serves: 6
Heat large covered saucepot of salted water to boiling over high heat. Add tortellini and cook as label directs; drain.
Meanwhile, in large skillet, melt butter over medium heat. Add chicken, garlic, onion and sage, and cook 3 minutes, stirring occasionally. Stir in mushrooms and peas, and cook 3 minutes longer, stirring occasionally. Add broth; cook 1 minute. Stir in cream, salt and pepper, cook 5 minutes. Gently fold tortellini into chicken mixture; cook 2 minutes or until heated through. Remove skillet from heat; stir in cheese. Serve garnished with parsley.
