Ingredients
1 pound Master Cut Beef Strips, stir-fry style
2 cups Sunnyside Farms Egg Substitute
2 cups mushrooms, chopped
1 tablespoon ground ginger
3 cups cabbage slaw mix
½ cup green onions, sliced
1/3 cup soy sauce
Plum or hoisin sauce to taste
8 large flour tortillas
Preparation
In large non-stick skillet, brown beef on medium-high. Add egg substitute, stirring occasionally to scramble. Add mushrooms and ginger; cook 3-5 minutes. Add cabbage, green onions, and soy sauce; cover and cook until cabbage wilts, 2-3 minutes. Stir to mix. Microwave tortillas until warm. Spread plum sauce down center of tortilla; top with Moo Shu filling, and roll up. Makes 8 servings.
