Ingredients
1 tablespoon Sunny Select Olive Oil
2 cups apples, peeled, cored, chopped
1 cup chopped onion
1 package (17 ounces) precooked pork roast au jus
1 (6.3 ounces) package instant sweet potatoes* or 4 cups mashed fresh sweet potatoes
Preparation
Heat oil in large skillet on medium-high; saute apples and onions 3 to 5 minutes. Add pork roast. Reduce heat to medium, cover and simmer 5-10 minutes. Prepare potatoes according to package directions. Serve pork mixture over potatoes. Makes 4 servings.
*Sunny Select Instant Mashed Potatoes can be substituted for sweet potatoes.
