1 tablespoon Sunny Select Olive Oil
1/2 pound turkey breast strips or cutlets, cut into 1-inch pieces
1 cup chopped onion
1/2 cup EACH carrots AND green beans AND broccoli, chopped
1 1/2 cups water
1 package (5.9 ounces) couscous
1 (1 ounce) packet garlic & herb marinade, prepared according to package directions
Shredded Parmesan Cheese, optional
Heat oil in large skillet on medium-high; brown turkey with onions. Addcarrots, green beans and broccoli; saute until slightly soft 3-5 minutes. Add water; bring to boil. Add couscous, reduce heat to low; simmer 5 minutes. Add prepared marinade; stir gently. Sprinkle with fresh Parmesan, if desired. Makes 4 servings.
