Serves 6
Ingredients
1 cup chopped chicken breast
12 large Master Catch shrimp, peeled, deveined and tails removed
1½ cups sliced mushrooms
1 bell pepper, seeded and chopped
1/4 cup chopped green onions
1 (26 oz.) jar Sunny Select Pasta Sauce
½ cup reduced-fat Ricotta cheese
Salt, pepper and cayenne pepper to taste
1 package penne pasta, cooked
Sunny Select Parmesan Cheese to taste
Preparation
In non-stick skillet on medium-high, cook chicken 3-5 minutes until browned. Add shrimp and vegetables; cook 5 minutes; stirring. Reduce heat to medium-low. Add pasta sauce and ricotta cheese; simmer 5 minutes. Season to taste. Toss with cooked pasta. Sprinkle with Parmesan cheese, if desired. Serves 6.
