Sizzling Summer Recipes:
CA Summer Salad
4 cups mixed greens or baby spinach
1 cup sliced nectarines
1-2 cups sliced strawberries or mixed berries
¼ cup sliced red onion
½ cup cubed mozzarella cheese
2 cups sliced grilled chicken
¼ cup raspberry vinaigrette
Sliced almonds (optional)
Toss all ingredients in a large bowl. Spoon onto serving plates; sprinkle with sliced almonds if desired. Serves 4
Watermelon Ice Pops
3 cups chopped seedless watermelon
½ cup sugar
½ cup water
2 tablespoons fresh lemon juice
Place watermelon cubes in blender; puree. In small pot combine sugar and water; place over medium heat. Simmer 3-5 minutes; stirring. Remove from heat; stir in watermelon puree and lemon juice. Spoon mixture into ice-pop trays, freeze until mushy; insert ice-pop stick in each holder. Freeze until firm.
BBQ Chicken Kabobs with Plum Sauce
1 lb chicken breast, cut into 1 ½-inch cubes
4 plums, pit removed, cut into chunks
1 EACH sweet yellow onion, bell pepper AND yellow squash, cut into chunks
½ cup Sunny Select BBQ Sauce
½ cup Asian Plum Sauce
Coat grill rack with non-stick cooking spray. Preheat grill to medium heat. Thread chicken, plum, and vegetables on 8 metal or water soaked wooden skewers, alternating chicken, plum, & vegetables. In small pot or microwave safe dish, add BBQ and plum sauce. Heat until hot; stir. Pour ½ cup sauce into small bowl for basting. Grill kabobs 3 to 5 minutes per side or until chicken is cooked thoroughly, turning occasionally and brushing frequently with sauce. Discard basting sauce, if any. Serve with remaining (non-basting) heated BBQ-plum sauce.
Serve with grilled potatoes and vegetables, garden salad, and shortcake sandwich for dessert!
