Take tailgating to a whole new level with this recipe for hot and spicy Sausage Heros!


6 sweet or hot Italian sausage links
3 green and/or red bell peppers, sliced 1/4-inch-thick
2 cups sliced yellow onions
3 garlic cloves, minced
2 teaspoons Italian seasoning
2 tablespoons Sunny Select Tomato Paste
1 package (10 ounces) cherry or grape tomatoes, each cut in half
1/2 cup water
2 tablespoons Sunny Select Balsamic Vinegar
Salt and pepper, to taste
6 (6-inch) hoagie or sub buns
3/4 cup shredded Italian cheese blend


In large stockpot, cook sausage over medium to medium-high heat 8 to 10 minutes, turning frequently with tongs to brown all sides. Stir in bell peppers and onions, and cook 7 to 8 minutes or until onions and peppers are lightly browned, stirring occasionally. Add garlic and Italian seasoning, and cook 1 minute, stirring frequently.

Stir in tomato paste and cook 1 minute. Stir in tomatoes and cook 1 minute. Add water and stir to loosen brown bits from bottom of stockpot. Reduce heat to medium and simmer 15 minutes or until sausage is cooked through, stirring occasionally. Remove from heat. Stir in vinegar, salt and pepper. 

Slice buns lengthwise in half but do not cut all the way through buns. Place 1 sausage into each bun. Spoon pepper mixture over sausage and sprinkle with cheese.

> Chef Tip
For tailgate grilling, sausages can be prepared on the grill. Pepper and onion mixture can be prepared at home in advance. Simply add veggies to foil packets and reheat on the grill. Try toasting your buns on the grill too!
