A refreshing way to enjoy potatoes!
Boil potatoes in salted water 15-20 minutes, or until fully cooked. Cool in cold water. Combine cream cheese, Greek yogurt, capers, chopped dill, smoked salmon and freshly ground black pepper. Slice potatoes ends for presentation then cut in half. Use a melon baller, scoop out insides of potatoes. Fill the potato halves with cream cheese mix. Top each potato with quartered cherry tomatoes and a fresh dill.
