Ingredients
Topping:
1/2 cup rolled oats
1/3 cup brown sugar, packed
1/4 cup flour
3 tablespoons butter, softened
1 teaspoon cinnamon
1/4 cup sliced almonds
Peach Filling:
6 cups Summeripe® peaches; peeled, pitted and sliced (4-6 peaches)
1/4cup brown sugar, packed
2 tablespoons cornstarch
1 teaspoon almond extract
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
Preparation
1. Preheat oven to 375°F. Stir together all topping ingredients except almonds in a small bowl with a fork until it resembles coarse crumbs; set aside.
2. Stir together all filling ingredients in a medium bowl and transfer to an 8- or 9-inch shallow baking dish.
3. Crumble topping over the peach mixture and sprinkle with almonds.
4. Bake for 30 minutes or until peach mixture is hot and bubbly and topping is golden brown.
