A USDA study found that artichokes contain more antioxidants than any other vegetable. They're available year-round, but reach their peak in April.

 SELECTING YOUR ARTICHOKES:

  • Look for fresh-looking, plump, compact green heads with tightly closed leaves.
  • Artichokes should be alive green and relatively blemish free.
  • Rubbing artichokes together should produce crisp feel and squeaky sound.

 STORING YOUR ARTICHOKES:

  • Refrigerate unwashed in a plastic bag for up to four days.

 SERVING YOUR ARTICHOKES:

  • Rinse artichokes thoroughly. With a sharp knife, cut off the stem near the base.
